EVERYTHING EGGS

Keeping things light and fluffy this week on the pod, talking all things eggs. I took a hard right turn after the tantrums episode to bring you something you never saw coming, this crisp October- eggs.   • MUST HAVE Mini Pull Cord Chopper: Make egg salad (and everything else in easy to eat chopped bites) in 2 minutes with this . Hard boiled eggs, mayo, relish, salt and pepper…Pull the cord!

  • Egg Bake: A mess-free, delicious solution for busy mornings. 10 eggs, splash of milk, whisk and pour into greased 8x8 pan, bake at 350 degrees 35-45min, add sliced cheese if desired and baked until melted. Cut into squares. Serve and store leftovers.

  • Sneak cottage cheese into scrambled eggs to boost protein: 1/2 cup cottage cheese & 2 eggs, whisk and scramble them up

  • Banana Pancakes: Gluten-free and only requires 1mashed banana, 2 eggs, cinnamon. mix and pour onto greased pan. Prepare like your would traditional pancakes. Enjoy!

  • Oven Scrambled eggs (easy for a crowd). When you are hosting a lot of kids, consider a breakfast for dinner theme.

    • 2T of butter, 12 eggs, 1 ¼ cup milk, and a pinch of salt & pepper. Melt butter in a 9x13 dish and pour in egg mixture. Bake uncovered at 350 in the oven for 10 - 15 minutes. Stir eggs and then bake 10-15 min more until eggs are set. You can even double the recipe in the same dish.
